Easy Protein Patties

Serves: 8 small patties, or 4 large patties
Time: 25 minutes

Ingredients:
· 2 eggs
· 2 tsp lemon juice
· 3 tbsp grated parmesan cheese
· ½ cup Italian seasoned breadcrumbs
· 3, 5 oz. cans, tuna, drained, OR 2, 12.5 oz cans chicken, OR 2,15 oz. cans beans
· 3 tbsp diced onion (half of small onion)
· 3 tbsp diced celery (1-2 celery sticks) or ½ diced bell pepper
· 1 pinch of ground black pepper
· 2 tbsp oil
Instructions:
1.) Beat eggs and lemon juice in a large bowl. Stir in parmesan cheese and breadcrumbs to make paste.
2.) Fold in tuna or chicken, onion, and celery until well-mixed. Season with black pepper
3.) Scoop out and shape tuna into 8, 1-inch-thick patties
4.) Heat oil in a skillet over medium heat, cook patties until golden brown, about 5 minutes per side.
Nutrition facts per serving: 208 calories, 12 g total fat, 110 mg cholesterol, 384 mg sodium, 12 g total carbohydrate, 1 g fiber, 12 g protein
Notes: protein patties are delicious when eaten alone, combined with a starch, topped on salad or dipped in sauce! Try out sauce recipe below for a creamy kick!
Ranch Greek Yogurt Dipping Sauce:
½ cup plain Greek yogurt
1 tsp garlic powder
1 tsp onion powder
½ tsp dill
Salt and pepper to taste
1.) Mix all ingredients together in a bowl and enjoy!
