Watermelon and Feta Salad

Serves: 4

Time: 10 minutes















Ingredients:

2 cups diced watermelon

¼ cup feta cheese (or other sharp cheese of choice)

2-3 cups greens (spinach, lettuce, spring mix, etc.)

¼ cup chopped onion (red, white, yellow, or scallion)

¼ cup nuts or seeds (walnuts, pumpkin seeds, pecans, etc.)

½ cucumber diced

For dressing:

¼ cup olive oil

2 tbsp balsamic vinegar

1 tbsp Dijon mustard

¼ tsp dried parsley

Pinch of salt and pepper


Instructions:

1.) Chop all vegetables and watermelon and toss with salad greens.

2.) Sprinkle over cheese and nuts or seeds.

3.) Using a bowl or mason jar, add all dressing ingredients together and mix by whisking together or shaking with lid.

4.) Drizzle dressing over the salad and toss together. Enjoy!


Notes: get creative and add cooked grains like couscous or quinoa. Try adding berries or other crunchy vegetables like radishes for different textures. Add cooked chicken or shrimp for extra protein.
